Who wouldn’t want to live on a graveyard?

This former service house for the Dutch Reformed cemetery of Hoogezand is a national monument dating back to 1889. With its basic but well-maintained materials and solid build, it’s got a cool, historic vibe. Located on the northeast side of the cemetery, it’s in a prime spot with a strong visual and functional link to its surroundings.

The house needs some renovation and modern updates, with guidance from Monumentenzorg. There might be subsidies or financing from the restoration fund to help with this. In short, it’s a unique place with loads of potential.

The ground floor has an entrance, a hallway with a toilet, and a staircase. The living room faces the street, and there’s a bedroom on the garden side with its own bathroom. The kitchen has simple, functional equipment. There’s also a side entrance portal and storage/workspace. Upstairs features a spacious landing and a large bedroom under the sloped roof, with potential for two bedrooms if you adjust the staircase. Something you may not know is both @Aaron and myself live life through our senses. Mainly smell. Sometimes taste. And always with our eyes closed when its really, really good. Aaron himself was a chef in a prior life.

While I can often roll my eyes at the cult of Michelin, we thought it’d be fun to highlight the most prestigious chefs in the most popular Outta Town spots. We’ll also balance out the pomp and circumstance in further editions highlighting local legends, home cooks, and more traditional recipes.

🇪🇸 Spain: Dabiz Muñoz

First up is legendary Dabiz Muñoz, renowned Spanish chef known for his avant-garde cuisine at DiverXO in Madrid, which holds three Michelin stars. One signature dish “Cold Poached Pigeon With Palo Cortado Wine Macerated for a Week”, features a cold poached leg of a pigeon meant to be eaten like a lollipop, of course….. The wait time for a dinner reservation typically around six months. Stalk Dabiz on insta.

🇮🇹 Italy: Massimo Bottura

Of course, of course… it’s Massimo Bottura. The very public Italian chef acclaimed for his contemporary interpretations of traditional Italian cuisine at Osteria Francescana in Modena, which boasts three Michelin stars. His signature dish, "OOPS! I Dropped the Lemon Tart" 🍋, is a deconstructed dessert with playful presentation…. the dish was actually created by accident.  🇵🇹 Portugal: José Avillez

It’s not Lisbon without José Avillez, Portugal’s crowned jewel known for his innovative approach to Portuguese cuisine at Belcanto in Lisbon, a two-Michelin-star restaurant. His standout dish, "Hake Fillet with Seaweed" 🐟, combines fresh, local hake with the umami of seaweed, and getting a reservation can take three to four months. Follow José Avillez on Instagram.

🇬🇷 Greece: Lefteris Lazarou

Master of seafood and traditional Greek flavors at Varoulko Seaside is Lefteris Lazarou in Athens. He has one Michelin star. His signature dish, "Squid with Pesto" 🦑, highlights the tender squid paired with a rich, savory ink sauce, and securing a table can require a wait time of up to two months. Check Lefteris out. 🇫🇷 France: Alain Ducasse

Alain Ducasse is a legendary French chef. Alain Ducasse au Plaza Athénée in Paris holds three Michelin stars. Read about his celebrated "Cookpot of Seasonal Vegetables" 🥕 below or wait three-months for a booking. Definetly check out his instagram: Alain Ducasse.

“Simultaneously a dish and an object, the cookpot in and of itself brings together the vision of Alain Ducasse. The idea is simple: seven vegetables simmered together in a white porcelain casserole dish specially created for this recipe. This vegetable dish is "glocal" capable of becoming local anywhere in the world.”
